From the beginning, the evidence was strong that slaughterhouses are dangerous to worker safety. This does not necessarily mean that slaughterhouses should be dismantled. It does mean they should be watched. Carefully. They are not a mail drop. They have effects on people's health and safety.
So they should be watched carefully. They were not seen for the most part until Upton Sinclair's book was published 100 years ago. They should be seen -- and watched -- now. The evidence is strong that action is required and also that assessing the risk before acting is a necessary part of the pandemic response.
